Asado
The region of Old Castile is called the zona de los
asados because it is renowned for its tender oven-roasted
baby animals such as lamb, kid, and pig. Large ovens
used for baking breads are put on hold to give way for
roasting meats for the villagers. This is particularly
popular in Segovia, where coachloads of tourists and
enthusiastic gourmets arrive for this melt-in-the-mouth
treat, so tender it can be carved with the edge of a
plate! Here in the Philippines, the local version "lechon"
is commonly served during big fiestas and big events.
